I had been wanting to make this for so long and finally gave it a go! It turned out perfectly sweet and smokey and super tender. It was so tasty so I’m sharing my recipe with you to try!
Ingredients:
- 1 chuck roast (mine was about 1.5-2 pounds and made about 5 servings)
- Beef rub (I used this one!)
- 1 cup of bbq sauce
- 2 tablespoons of brown sugar
- 2 tablespoons of honey (use local honey!)
Directions:
- Preheat your smoker to 225 degrees
- Rub your chuck roast with your beef rub. You want to make sure to coat it evenly and rub it to make sure all the seasoning is moist.
- Once your smoker is up to temp place the roast directly on the grate.
- Let smoke for an hour and then flip it to ensure it cooks evenly. Then cook another hour or until 165 degrees.
- Then you will remove the roast and let it sit for 10-15 minutes.
- While it is cooling mix your BBQ sauce, honey, and brown sugar in a small bowl.
- Then cut your roast into 1 inch pieces and place in a foil pan.
- Pour your sauce mixture over the meat and stir until coated.
- Cover the pan with foil and place back in the smoker for 1.5-2 hours or until the meat is tender.
- Remove and serve immediately!
Notes:
Cooking time definitely varies based on the size of your roast. If you have a larger roast I would recommend doing 250 degrees as well as increasing the time.
I used a plain BBQ sauce and added the brown sugar and honey. You can use less if you don’t want it to be as sweet.
